“Chef Quang Dung has embraced the open flame as his trademark. “Chapter” is tucked away in an Old Quarter shophouse that was a hotel in a previous life. Guests pass its open kitchen and grill on the ground floor on their way to their table upstairs. Among the à la carte and set menu options, you’ll find a grilled pigeon main with a green pea purée and an addictive boned stuffed grilled chicken foot with zingy salsa. (Don’t knock it until you’ve tried it).
You’ll want to capture the moment when a beef tallow candle is lit for you, its melty fatty goodness meant to be sopped up with freshly toasted sourdough. It’s ‘grammable, but it’s also steeped in history. I added a refreshing wedge salad to ensure I got my greens. You’ll also find a bar upstairs and private dining rooms for your hush-hush rendezvous.”

In collaboration with The Mansions Vietnam (TMG) – a leading luxury hotel and resort management company, MARS Architects embarked on a visionary project to design a professional and comfortable workspace. With a focus on the Asian Modern style, strategic arrangement of functional areas, and thoughtful lighting and color effects, every detail was meticulously crafted to enhance employee engagement and well-being. The result is a harmonious, intuitive, and artistic space that fosters reflection, emotion, and productivity.

Chapter Dining and Grill
Chapter is a story of a dining experience that strives to impart its innovative energy and authentic spirit in the fledgling world of fine dining in Hanoi, Vietnam. Its culinary concept prioritizes bringing out the most sincere quality of every ingredient by marrying the primal technique of chargrilling with modern cooking techniques. Our design of the restaurant therefore embraces this concept, respecting the authenticity in materiality while elevating them to enhance the dining experience.
The restaurant space is renovated from a two-story space inside a rundown hotel within the historic Old Quarter of Hanoi. It is nestled on a long and narrow street, often crowded with people exploring this tourist attraction area. The façade takes inspiration from the obscure and ever-moving nature of flames while taking advantage of its dynamic viewpoints to arouse curiosity from passersby. Our design prioritizes the use of materials in their authentic and rustic forms, with the main ones being corten steel, stone, and wood while showcasing their impressive beauty through material manipulation techniques.
